● 2 Green Apples
● 2 tbsp oil
● 1 tsp mustard seeds
● 1 medium onion chopped
● 2 small bay leaves
● 2 green Chilly chopped
● 5-6 dried red chilly
● 1 tbsp Curry Powder
● 1/4 tsp turmeric powder
● 1 tsp chilly powder
● 4 garlic cloves chopped finely
● 1 tbsp sugar
● Salt as per taste
● 1/4 cup coconut milk
● 1/2 - 1 cup water
Wash the apples nicely and pat dry with kitchen towel. Cut them into medium cubes with skin on. No need to remove seeds or the core the apple. Heat the oil in a pan. When oil is heated add mustard seeds and let it crackle. Add the onions, curry leaves, green and red dried chilly and saute till onions turns soft. Add the curry powder, turmeric and chilly powder, mix well and saute for a min. Add the apples, garlic, salt, sugar and cook on medium high heat for about 10 minutes while gently stirring occasionally coating the apples all over with the spices. The apples will start to soften slightly. Add the coconut milk and water, stir well, cover the pan and cook for another 5-10 minutes until the apples soften Adjust the gravy consistency as per your requirements. Please note that the apple should be soft but it should not turn mushy and lost it shape.
